Quattronotti is a special Negroamaro passito, whose grapes were unusually harvested at night. Having already reached the maximum degree of drying, the grapes were harvested manually at night to avoid damage and further exposure to the sun.
The name Quattronotti is in memory of the four nights spent by the farmers for this manual harvest.
