Sfursat (also known as Sforzato) is a prestigious, full-bodied red wine from the Sforzato di Valtellina / Sfursat di Valtellina DOCG in Lombardy, Italy. Produced exclusively from the Nebbiolo grape (locally called Chiavennasca), it is crafted using the appassimento method, where grapes are dried for several months before fermentation to create an intense, highly concentrated, and alcoholic wine.
Key Characteristics
- The Process: Hand-picked bunches are dried in ventilated rooms (fruttai) until they lose 30% to 32% of their weight, which concentrates sugars, colors, and aromas.
- Flavor Profile: Offers an intense bouquet of dried fruits, dark cherries, plum, violet, and sweet spices like cinnamon and cloves.
- Palate & Alcohol: Powerful, rich, and velvety with prominent yet elegant tannins and a high alcohol content, typically around 15.5% ABV.
- Aging: Requires at least 20 months of aging (often in oak barriques), resulting in a wine that can age beautifully for 15+ years.
