601 Rosé is characterised by a pale rosé colour; on the nose it is fresh, with fruity and floral notes and a light yeasty aroma. It has a fine and persistent perlage; fresh on the palate, elegant, with a good structure and a light mineral note.

WINEMAKING AND SECOND FERMENTATION
The grapes are harvested by hand and placed in small crates (200 kg). After a short maceration, the de-stemmed grapes are softly pressed; The juice is then clarified by natural sedimentation and it undergoes the alcoholic fermentation at the temperature of 18/20°C. After the fermentation, the wine ages on the fine lees  until the cuvée is prepared (January); in March the tirage takes place and the wine undergoes a secondary bottle fermentation of 20-24 months, before it is disgorged.
