TASTING NOTES
Amber-hued and expressive, with aromas of dried apricot, orange peel, and warm spice. Textured and lightly tannic on the palate, it shows candied citrus, stone fruit, and earthy minerality, finishing with elegant grip.
FOOD PAIRING
Pairs beautifully with aged cheeses, lamb or pork with herbs, rich seafood dishes, and Mediterranean meze.
VINIFICATION
Assyrtiko & Sauvignon are spontaneously fermented in 500Lt clay amphoras giving birth to eLXis. A wine that ages for 60 days in contact with the grape skins and then is bottled without any treatment.
