Le Crocine "Cuvé Eva" Toscana Rosso, Marzichi Lenzi

The Cuvée Eva is made almost exclusively from Cabernet Franc, a grape variety that has always displayed special characteristics in the various areas from which it is selected. It is distinguished by an unusual personality manifested particularly during the ageing phase. It is a wine that is intriguing in its own way, like the special person to whom it is dedicated: Eva Green, Joy's twin sister. It combines its recognisable varietal character with pleasing notes of ripe red fruit and a range of tertiary aromas that develop with maturity. It expresses its enveloping character on the palate, with firmness and balance, supported by an unexpected freshness.

VINIFICATION:

Upon reaching the desired level of ripeness, the grapes are harvested and brought into the cellar. Careful selection of the grapes is followed by destemming, and then the must is transferred into steel tanks. Temperature-controlled fermentation and macera- tion take place over a period of approximately three to four weeks, keeping each process under strict control to reach the greatest complexity. Upon completion of malolactic fermentation, the wine spends about a year ageing in French oak barriques, both new and used, before being bottled.
